Cranberry, Raspberry, Pear Sauce

Ingredients

  • 1/2 cup water
  • 1/2 cup sugar
  • 12-oz cranberries, thawed, if frozen
  • 1/4 teaspoon dried ground ginger
  • 2 ripe pears
  • 1 lemon, for zest/juice
  • 1 orange, for zest
  • 1 cup raspberries, fresh or frozen

Instructions

Place water and sugar in medium saucepan; bring to boil and stir to dissolve sugar. Reduce heat to medium, then add cranberries and ginger; simmer 4–5 minutes.

Peel, core, and cut pears into 1/4-inch cubes. Zest/grate lemon (no white; 1 teaspoon); repeat with orange (no white; 2 teaspoons). Squeeze lemon for juice (2 tablespoons).

Add pears, zests, juice, and raspberries; simmer 6–8 minutes, stirring occasionally, or until cranberries pop and sauce thickens. Serve.
