  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1 egg (or 1/4 cup egg substitute)
  • 1/3 cup molasses
  • 2 tablespoons water
  • 2 2/3 cups all-purpose flour
  • 1/2 teaspoon kosher salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 2 teaspoons ground ginger
  • Wax paper

Place softened butter and sugar in large bowl; beat with electric stand (or hand) mixer until light and fluffy. Add egg, molasses, and water; beat until combined.

Combine flour, salt, baking soda, cinnamon, cloves, and ginger until blended. Add flour mixture to butter mixture; beat until combined.

Divide gingerbread mixture evenly on large pieces of wax paper. Fold paper over and press to form 1/2-inch-thick discs. Chill 30 minutes or until firm.

Preheat oven to 350°F. Roll out dough between wax paper to about 1/4-inch thick. Cut out gingerbread people using a floured cookie cutter. Place cookies on nonstick baking sheet 2 inches apart.

Bake 8–10 minutes or until golden on the edges. Let stand 5 minutes to cool on baking sheet. Transfer gingerbread people to cooling rack for 15 minutes or until completely cooled. Decorate as desired; serve.
